Fiber Rich Banana Mini Muffins

Perfect on the go snack or paired with fruit for breakfast!

Ingredients

  •   3 cups rolled oats

  •   2 bananas mashed

  •   2 tablespoon coconut oil

  •   2 packets of stevia

  •   2 tablespoons honey

  •   2 teaspoons vanilla extract

  •   5 tablespoons chia seeds

  •   1 teaspoon cinnamon

  • 1 teaspoon nutmeg

    Directions

  1. mix all together in one bowl

  2. spray nonstick spray onto mini muffin pan

  3. fill 3/4 full

  4. bake 15 minutes at 350F
