The Perfect Summer Side Dish

Quick and Easy Chickpea Summer Salad

Ingredients

  • 1 can of corned rinsed and drained

  • 1 can of garbanzo beans/chickpeas rinsed and drained

  • 1/2 red onion diced

  • 1 red pepper diced

  • 6 celery sticks diced

  • 1.5 cups of kale finely chopped

Dressing:

  • 3 tablespoons of extra virgin olive oil (click on image to link of my favorite olive oil- an organic and sustainable product!)

  • 1 tablespoon of red wine vinegar

  • salt and pepper to taste

Directions

  • mix everything but dressing together in a larger bowl

  • whisk all dressing ingredients together in a separate smaller bowl

  • pour dressing before serving and add salt/pepper as needed

  • stir and enjoy!
